Last weekend I hosted a Dinner party at home all in aid of #Curryforchange a campaign by the wonderful charity Find Your Feet. You may recall a blog post I recently published all about this charity and their life changing work albeit a small charity organisation, their efforts are immense. Well going back to the dinner, many of my guests were intrigued by an all “vegetarian” dinner it was like suspense for them and in a way it was exciting for me to keep them guessing. Sometimes Vegetarian food gets bad press mainly because many who are non vegetarian haven’t experienced Vegetarian food in its finest forms, we don’t just eat “Rabbit food” or boiled veg  and yes it can be bursting with flavours and different textures :).

The week  leading to it I became poorly and was advised on bed rest however, I wasn’t going to be turning my back on an event for a great cause. Jessica from Find your feet was amazing her supportive and encouraging emails and communications ensured the event went smoothly. Firstly a huge Thank you to Natco Foods for sending me a box of ingredients which consisted of mini popadums, coconut milk, various spices, lentils and nuts. A big Thank you to Kingfisher Beer for supplying a crate of beer which went down really well with the meal, Find your Feet for sending me all the campaign materials and Binita from Binny’s Kitchen who kindly captured some lovely pictures on the night and posted them on Social Media.

The night finally arrived and everything fell into place just as it should, all the guests were delighted to be able to support such a great campaign, they enjoyed their meal and donated generously…. Thank you to all who came and made this evening a memorable one.

One of the desserts I made on the night was an oreo cookie based salted caramel and chocolate dessert tarts, the combination of sweet, salty and rich chocolate paired really well with notes of warm cardamom. The chocolate I used was 70% Ecuadorian drinking chocolate beads kindly sent to me by Hans Sloane London. These beads are silky smooth when melted, they are drinking chocolate beads which can be enjoyed hot or cold. However, these beads are so versatile, you can use them in baking, cocktails or even desserts. I used these beads to make this rich and indulging mini desserts.

Cardamom spiced Oreo cookie, salted caramel and dark chocolate dessert
Preparation time: 30 minutes
Ingredients:
200g oreo cookies- remove the cream
50g salted butter melted
200g 70% chocolate beads (can use any 70% chocolate)
220g Double cream
1/4 Tsp crushed cardamom
Salted caramel (you can use any ready made if not home made)
Fresh Raspberries

Method:

1. Place the oreo biscuits (cream removed) into a food bag, using a rolling pin crush the biscuits into fine crumbs, leaving a few coarse pieces.
2. Transfer into a bowl, add the melted butter and mix well.
3. In a no stick pan add the double cream and bring to a gentle boil on low/medium heat stirring in between to ensure it doesn’t stick. This will only take a few minutes, as soon as you reach a boil turn off the heat.
4. Pour in the chocolate beads and cardamom and stir until melted and smooth.
5. In you dessert cups/glasses, add a teaspoon of crushed oreo cookie, followed by a teaspoon of salted caramel then a layer of chocolate and cream ganache. Finish off with a sprinkle of crushed oreos and raspberry.
6. Leave the desserts to cool and set at room temperature. You can make this dessert in advance and leave overnight.
